HEALTHY COOKIES


The words cookie and healthy are not usually synonymous with each other but this little number is about to change all that. These cookies taste so sweet and full of flavour you'll never guess they're flour free, oil free, dairy free, gluten free aand refined sugar free! 

They're the easiest, quickest things to bake and can be made with ingredients your bound to have in stock, they don't even require any baking powder. So what's in these magic cookies I hear you ask?


Ingredients (Makes 12):

- 2 cups gluten free oats
- 2 ripe bananas 
- 2 tbsp almond butter
- 2 tbsp shredded coconut 
- 1/2 cup of cacao nibs 
- 1 tbsp agave syrup

Instructions:

1.) Preheat the oven to 170c. 

2.) Mash the bananas then mix in the other ingredients. 

3.) Line a baking tray with parchment, scoop out the mixture a bit at a time and round off into cookie shapes with your hands, spread the mixture evenly between 12 cookies. 

4.) Bake for 15-20mins or until golden brown.


Here I've served mine with some homemade almond milk, made using my Omega juicer. They also make a delicious dessert served with banana nice cream.

VEGAN HEAVEN (4/5)

Wai kika moo kau




By now I'm probably boring you with all these Brighton posts but there really is a lot to say on the matter! It has without doubt been the easiest place I've found to holiday and eat 'normally' without having to worrying about a thing, which is exactly what you want from a relaxing trip away - alas if only vegan was the norm worldwide, but for now we have Brighton!

Wai kika moo kau (or Why kick a moo cow) is a strictly veggie/vegan cafe situated in the laines. It was our breakfast place of choice for the last morning of our stay, we chose pancakes as I'd been craving them for quite some time! They came nicely presented in a fluffy stack of 4, with cinnamon and sugar dusted all around the plate and a large pot of maple syrup for pouring - they were light, fluffy and absolutely divine. We decided to go all out, seeing as it was our last morning and ordered a creamy banana mylkshake to go with, the whole breakfast could have been straight out of an American diner.



I like that it took a while for them to arrive as this is usually a good sign (i.e no microwaves). The menu was also surprisingly cheap for the quality and quantity received. The place itself was light and airy with a fun cow print adorning the counter and walls. It also had a good energy about it, which I usually find with most strictly veggie/vegan places, I believe like-minded people coming together in this kind of environment in a great inducer of mindful conversation and feel good vibes. VEGAN HEAVEN (3/5)

Terre a Terre



Terre a Terre has a really special place in my heart as it opened my eyes to the wonderous possibilities of vegan food and made me confirm in my mind that I'd made the right decision by turning vegan. It's also the very reason we came back to Brighton in the first place, it's THAT good, albeit an indulgent treat. I've never had such beautifully presented plates that taste better with every bite, you won't want to waste a morsel! It deserves 10/5 for everything; food, presentation and service - no exaggeration.

This is a predominantly vegetarian restaurant but the menu is clearly labelled with what dishes are vegan or have a vegan choice and the same goes for gluten free. We were so excited to eat we actually forgot to say that we wanted the vegan option and had to hurriedly change our order!


While we don't normally drink wine this was organic and vegan so we decided to give it a try. We had it with our meal last year in celebration of my birthday and enjoyed it so much we had to order it again. You can even buy their wine, condiments and sweets to take home which I thought was a clever idea, especially for those that live out of town. Fyi these products are also available through their website if you can't make it all the way to Brighton. 



We skipped starters and went straight for the main. I fully recommend you go for the Terre a Tapas Plate to share as you get two of every mini dish (one on on either side), again much like the Food for Friends mezze it gives you a chance to sample a variety of different dishes the restaurant has to offer. The creamy possibly(?) cashew cheese dip in the middle was to die for and the grapefruit tucked into a Japanese style bun initially looked like salmon so that was a fun detail. To top our meal off nicely, for dessert we chose churros that came with 3 incredible dipping sauces: salty caramel, vodka cherries and dark chocolate, mm mm!

VEGAN HEAVEN (2/5)

Rock-Ola




After having a large dinner at Food for Friends the evening before, coffee bar Rock-ola was our port of call for a late all-day vegan breakfast. While it's not a strictly vegetarian/vegan place, what first attracted us to visit Rock-Ola over all other breakfast joints was the fun 50 and 60s diner theme, which made it so much more than your typical greasy spoon.

The attention to detail given to the theme can be seen throughout the diner, from the wall hangings and shelves of memorabilia, right down to the retro salt and pepper shakers. The cafe even joins on to a record shop, which was a nice continuation of the music theme, there's also a free jukebox complete with songs from the time for you to peruse and play records while you dine.




The breakfasts were naughty but super tasty, we'd never tried fake bacon before (or fakon if you will) so that was a nice change, it really just tasted like the smokey bacon flavour found in crisps, so it wasn't as scarily meaty as it first seemed. While I wouldn't normally eat this much 'bad food' or buy fakon myself, I feel it's fine to splash out on holiday and try something different once in a while (providing it's vegan!), to me life is about balance.

We had the option of chips or hash browns and beans or tomatoes, being the opposite couple we are we had to choose differently but then try each others - which were equally delish in different ways. We had it with a cup of soya milk tea and the breakfast came with a huge plate of (vegan) buttered toast - bonus! If I lived in Brighton I'm sure this would be a regular haunt of mine.

VEGAN HEAVEN (1/5)

Food for Friends



Last week we decided to treat ourselves to a weekend away from the big smoke, we wanted somewhere by the sea where we could relax but have fun and not have to worry about where to eat. Brighton seemed to fit the bill perfectly. We'd been before and visited a veggie restaurant called Terre a Terre which made us hungry for more! - (not literally we were stuffed to the brim). It turns out the rumours were true, Brighton really is like being in vegan heaven. All the food we had was to die for, I could not recommend it more for a completely indulgent mini break. There's plenty of healthy and raw vegan options too so there really is something for every mood.



We visited Food for Friends on our first evening in Brighton for dinner, as I'd done my research before our trip we knew it was a highly rated vegetarian restaurant with lots of vegan options so we were prepared to have an amazing meal. It didn't disappoint, the ambience was sophisticated and special enough for occasions but still felt homely and warm. The food was hearty and filling with a rustic feel and we got to sample all kinds of vegan options from around the world. I liked that everything was clearly marked on the menu as to whether it was vegan, gluten free or contained nuts, making us so called 'fussy-eaters' feel normal by not having to ask. The little bowl of complimentary vegetable crisps on the side were also a nice touch - though definitely not needed due to the vast portion sizes!


To start we ordered some bread which came in huge chunks (there's that rustic feel again) with a sesame breadstick and some balsamic and chilli dipping sauces. The cocktail to the left was a non-alcoholic strawberry and elderflower mixer and like everything else it was delicious so I savoured every sip!




If your one of those people that likes to try what's on everyone else's plate (hands up thats me - much to the annoyance of my bf) the best thing to do is to share a mezze platter. It's a real experience for the senses and that way you get to sample a variety of dishes the restaurant has to offer. Food for Friends even has a sweet platter made up of 4 different desserts complete with different sauces, cream and garnishes - it was out of this world!

OVERNIGHT CHIA COCONUT OATS


Cool, creamy, substantial and satisfying - this is a breakfast of dreams. This delicious oat and chia seed combo is a great way to kick start the day as both fill you up and provide you with lots of energy. The chia seeds give you a quick boost while the oats are a slow release form of energy, able to carry you through till lunchtime.


Ingredients:

- 1 cup of gluten free oats
- 1-2 cups of almond milk (depending on how thick you like your oats to be)
- 2 tbsp coconut yoghurt
- 2 tbsp chia seeds
- Small handful of berries/fruit of your choice
- 1 tsp vanilla extract
- 1 tbsp maple syrup/sweetener of choice

Topping:

- 2 tbsp coconut yoghurt
- Frozen berries/fruit of choice
- Gluten free granola


Method:

Pour all the ingredients in the order listed into a sealable jar then stir the mixture. Refrigerate overnight and stir it again in the morning. Add coconut yoghurt, granola and frozen berries on top to serve.

TROPICAL CHIA PUDDING


Chia seed pudding is my go to recipe if I know I won't have much time in the morning to prepare a healthy breakfast. It really is a healthy, handy time saver as it's made with as little as 3 ingredients and literally takes a few mins to throw together the night before, you can even take it with you to go the next day.

There's many other reasons to love chia seed pudding, not only are chia seeds gluten free, they're also packed full of; nutrients, antioxidants, fibre, omega-3 and minerals to name a few benefits! As well as making a quick and easy breakfast it can also be eaten as a healthy snack or dessert (what's not to love about that?). 


Ingredients (Serves 1):

For the pudding:

- 1/2 cup of chia seeds
- 2 cups of almond milk
- 2 tbsp maple syrup
- 1 passionfruit (optional)

For the topping:

- 2 tbsp coconut milk yoghurt (I used Coyo)
- 1 passionfruit
- Coconut chips 

Method:

1.) Combine all the pudding indigents into a jar and stir. Close the lid tightly then shake vigorously.

2.) Come back to your fridge to stir your jar a few hours later (I forgot this step this time and you can see the chia seeds stuck to the bottom so learn from my mistake!)

3.) Leave to chill in the fridge for at least 4 hours or overnight. 

4.) Serve with fruit and nut toppings of your choice.


What's so great about this pudding is that you can add whatever fruit/nut toppings you like and combine with different milk/sweeteners to give you a variety of flavour combinations. I had some Coyo yoghurt so decided to go for a totally tropical theme as I'm currently into breakfasts that give me that sunshine feeling before I start my day (see Healthy Chocolate Oats). This beautiful coconut and passionfruit combo certainly had me dreaming of warmer climes and served as a welcomed reminder that Summer is not too far away!

HEALTHY CHOCOLATE OATS


So you may be thinking boring old chocolate oats, as a blog post - is she for real? But these aren't just any plain old chocolate oats, these are healthy superfood chocolate oats (said in a sexy Marks and Spencer ad kind of way), packed with energy inducing ingredients and yummy warming goodness.

While it didn't take me long to come up with a title, it's actually taken me a lot longer to come up with a recipe that I'm happy with. I've often found chocolate oats made with cacao to be too bitter and not sweet enough for my liking -  but then again I have a VERY sweet tooth.

I'm now trying to satisfy this sweet tooth in a way that doesn't compromise on healthy. I did this here by adding a date to the mix and a tsp of coconut sugar. Previously it would have been dairy free choc chips and large helpings of agave all the way, so this is a big improvement!

My other healthier sources of sugar include fruit and maple syrup, honey is also an excellent healthier source of sweetness if your not a strict vegan like me.

Ingredients:

- 40g/1 cup gluten free porridge oats
- 200ml of plant based milk, I used almond
- Tbsp chia seeds
- Pinch of pink salt
- Tbsp flaxseed
- Tbsp organic cacao powder
- Tbsp organic maca powder
- 1 chopped date
- 1/2- 1tsp coconut sugar
- Sprinkling of cacao nibs

Recipe:

1.) Weigh out 40g of oats or use 1 cup.
2.) Add this to a pan of plant based milk and warm for around 5mins along with the other ingredients in the order listed.
3.) Your oats should start to bubble after this time, that means they're ready to eat!
4.) Top with a scoop of nut butter and fruit of your choice.


My favourite toppings with chocolate oats are; peanut butter and banana or almond butter and berries. Here I went for a slightly tropical meets winter topping with banana, coconut chips, almond butter and frozen blueberries, as it was an insanely cold, rainy, grey day outside but I wanted to feel sunny on the inside!

PEANUT BUTTER MYLKSHAKE



Was there ever a better trio than chocolate, peanut butter and banana? Most of us will be trying to wean ourselves on to healthier foods now that the festive season is over and 'detox' January has begun. What better way to ease in to the process, than with the healthy dessert in a jar that is PB mylkshake. This dairy free mylkshake is seriously rich, sweet and creamy enough to satisfy the biggest of sweet tooths (I should know!), without leaving you feeling sluggish and tired afterwards - it also makes for a healthier alternative to milkshake for kids.

The filling peanut butter and bananas should leave you satisfied until lunchtime - if you drink enough, but you can always turn this into a more substantial breakfast by adding oats. I recommend drinking this mylk after a workout to give you an energy boost and repair those muscles.

I love that this smoothie is so easy to make and consists of ingredients I can easily buy or always seem to have in stock.



Ingredients: (makes 1 large serving or 2 small)

- 6 frozen bananas (you could also use ripe bananas and add in ice)
- 2 tbsp cacao powder
- 3 heaped tbsp smooth organic peanut butter
- 4/5 cups of unsweetened almond milk (more or less depending how thick you like your smoothie)
- 1 tbsp pure maple syrup (I tried sweet freedom as I had used all my maple syrup over Christmas!)

Instructions:

Add all ingredients in order listed into a blender and mix on a high/smoothie setting for 30 seconds or until smooth.

If you wanted to make this smoothie an indulgent frosty Wintertime treat, top with some dairy free whipped cream and/or choc chips.

EASY PEASY MAC AND CHEESEY!


With the likes of pizza and mac and cheese being my all time favourite indulgence meals, the one thing I sometimes miss as a vegan is cheese. Sure there's Cheezly, Sheese and No Muh (No Muh has to be the best I've tried so far) but nothing has quite hit the spot in terms of substitutions. The time came to take matters into my own hands and see if I could come up with something that would satisfy my needy cheesy tastebuds. 

This isn't technically a recipe, you just throw the ingredients together in a pan until it tastes good! First of all you need to cook the pasta shells (or macaroni if you prefer), I won't baby you by telling you how to do this...

While the pasta is cooking, pour some unsweetened almond milk in a pan on a medium heat, I would say allow 1 cup for each person. Add lot's of nutritional yeast (this gives it that cheesy taste) then a half teaspoon of: nutmeg, paprika, salt, black pepper, garlic powder, onion powder and cumin. Squirt in a teaspoon of mustard and a sprinkle of turmeric to give the sauce a golden colour.  Add a corn starch/thickening mixture, following the instructions on the packet. Then season with salt, pepper, paprika and hot sauce to taste (optional). 

A quick and easy meal using cheap pantry ingredients. You can also add extra ingredients to the mac and cheese to make it more interesting and substantial such as; tofu dogs, soy protein and broccoli or peas.

COOKIE CAKES


I'm calling these cookie cakes as they're a bit of a spongey/crispy hybrid, perfect for when you can't decide whether you fancy a cookie or a cake, well now you can have both!

The recipe for these can be found here, I used a muffin tin to bake them so it would give me a deep cakey cookie but you can just use a flat baking tray if you'd prefer. Otherwise I kept the recipe pretty much the same, the only addition I made was a 1/2 cup of walnuts (having found these are rich in Omega-3 I'm trying to amp up my intake!) I also opted for soya margarine rather than oil and added an extra 3/4 cup of almond milk to give them a spongey cake texture rather than a crisp cookie one. 

I love that the recipe is measured in cups, it's so simple to follow and means you can't really get it wrong, which means the quicker it's ready and in my belly!


Using a spatula for this part really helps get it all in as the mixture is quite sticky!


They will never come out brown so take them out when they are lightly golden, you don't want to burn them! I cooked my cookies in a preheated oven for 14mins at 180C.


I couldn't wait to tuck in, the perfect partner in crime for a cuppa tea!

CAT & THE CREAM




On this dreary drizzly day, when all you want to do is tuck up at home with a cuppa tea, a good book and something naughty to nibble at I thought I'd share with you my favourite Vegan cake by a company called Cat & The Cream. My life became complete when a Wholefoods recently opened up nearby me, being a vegan it just makes food shopping a whole lot easier (and pricier!) but I've always thought it's important to spend your money where it matters i.e nutrition, health, wellbeing etc.

Ok so the cake isn't nutritious or healthy but it definitely makes me happy so that counts as wellbeing right?! So far I've tried the Banana, Cashew and Peanut Butter which was pretty amazing but my fav flavour has to be the Banana, Walnut & Choc Chip with Butterscotch Icing (drool). They are very rich and highly calorific at a whopping 509(!) cals per cake, so I often share one of these with my other half or save the rest for another time (literally having your cake and eating it too!), so while they retail at around £2.69 - which is quite pricey for a cupcake, you do get a big portion for your pennies. You can tell a lot of thought has gone into this product as they're so perfectly packaged, at halloween my cupcake even had a cute little dark chocolate ghost on top of it!

These cupcakes are: Vegan, Dairy Free, Wheat Free AND Soya Free, which must be quite a task to achieve. I really appreciate when food companies don't automatically use soya, as vegan products are often full of it!

Another great vegan cake company based at the Greenwich Market in London is Ruby Tuesdays, I bought my boyfriend a birthday cake from her stall this year and it tasted just like a real chocolate cake, my non-vegan/vegetarian relatives couldn't even taste the difference! They also offer a variety of completely vegan baked goods such as: banana bread, biscuits, brownies and even donuts(!). Their pretty little stall is worthy of a post in itself, which reminds me I must pay them a visit again soon...

NUTS FOR BROWNIES


I found this recipe for vegan brownies on the internet a while back and have been wanting to make them ever since but somehow never got round to it. Last night I finally pulled all of the ingredients together and gave it a whirl while the boyfriend was out, as me + baking = lot's of mess in our open plan kitchen.

The photographs really don't do these brownies justice (I'm working on upgrading my camera soon) as these were scrum-diddly-umptious if I do say so myself! The consistency was just right, a key component to making the perfect brownies. For me they've got to be gooey in the middle and slightly harder on the outside with plenty of chocolate so they're nice and moist. I even added my own dairy-free chocolate chips (80g), from Wholefoods and 3 big spoonfuls (or 100g) of organic Whole Earth peanut butter to give it some oomph. 

I was shocked by the measurements as it seemed like a lot and it turned out it was! It gave me so many brownies I don't know what I'm going to do with them all. Safe to say I'll be palming them off on to friends and family all week long. The pics show the big ole slabs I first cut them into but I will be cutting them down to halves or even bitesize chunks, after finding out how gooily rich they are!

Although not the healthiest of recipes we all need a sugar fix now and again and these brownies will certainly do the trick! (to be enjoyed in moderation of course...).
